Pimm’s Cup

Redolant of summer and all things British aristocratic, the classic Pimm’s Cup involves

gin-based liqueur that originated in London. It is both bitter and sweet, lemony and herbaceous, sparkling and refreshing. And the cocktail is loaded with a borderline-ridiculous garnish situation. Let’s say this is the British answer to Sangria.

Directions

  1. In a pitcher mix the Pellegrino or lemon soda, Pimm’s, and lemon juice. Stir in cucumber, strawberries, and basil. Refrigerate for 10 mins.

  2. Fill 6 highball or collins glasses 2/3 full with ice and pour cocktail evenly over the ice, making sure each glass gets equal amounts of cucumber, strawberries, and basil.

  3. Place a wheel of lemon and orange on the edge of the cup and garnish with a sprig of mint.
