Garlic Herb Compound Butter Green Beans
Today we’re focusing on stovetop control and layering techniques—how to use boiling water for quick blanching, then finish vegetables in a pan using fat as a flavor carrier. Green beans are briefly blanched to lock in color and texture, then tossed in a warm skillet with compound herb butter that melts into a simple, glossy sauce. It’s a great example of how heat + timing + fat = flavor.

Directions
-
Make the Herb Butter (Compound Butter): In a small bowl, mix softened butter with chopped herbs and garlic (if using). Set aside at room temperature while you cook the beans.
-
Blanch the Green Beans: Bring a large pot of salted water to a boil. Add green beans and cook 2–3 minutes until bright green and just tender-crisp. Immediately transfer beans to a bowl of ice water to stop cooking. Drain and pat dry.
-
Sauté and Build Flavor: Heat a large skillet over medium heat. Add blanched green beans and a small pinch of salt. Toss for 1–2 minutes to warm through and dry off excess moisture.
-
Create the Pan Sauce with Butter: Add herb butter to the pan. Let it melt and coat the beans, gently tossing to glaze them. Add a splash of lemon juice if using for brightness.
-
Serve: Taste and adjust seasoning with salt and pepper. Serve warm as a side dish or part of a grain bowl.
