Savory Cheddar Herb Drop Biscuits

These savory cheddar herb biscuits are a great introduction to baking because they teach one of the most important lessons in the kitchen: less is more when mixing dough. We’ll practice measuring accurately, working with cold ingredients, and mixing just until combined to create biscuits that are tender, fluffy, and full of flavor. No rolling or cutting required—mix, scoop, and bake!

Directions

  1. Prepare: Preheat oven to 450F and line a baking sheet with parchment paper. Melt 4 tablespoons of butter and set it aside so it can begin to cool.

  2. Combine dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and garlic powder.

  3. Combine wet ingredients: In a separate bowl (or in a large measuring cup) whisk slightly cooled butter into buttermilk (it’s OK if the butter begins to re-solidify or the mixture looks a little curdled).

  4. Make dough: Pour buttermilk mixture into flour mixture and stir until just combined. Use a spoon or spatula to gently stir cheese into batter until incorporated.

  5. Drop the biscuits: Using a pair of spoons, drop batter by heaping spoonfuls (about 3 Tbsp in size) onto prepared baking sheet, spacing at least 2” apart.

  6. Bake: Bake for 10-12 minutes or until light golden brown.

  7. Prepare butter topping: Whisk together melted butter, garlic powder, and herbs.

  8. Baste biscuits: When biscuits are finished baking, allow then to rest for 5 minutes ot finish steaming through. Use a pastry brush to baste each biscuit generously with butter mixture or don’t simply spoon some of the butter on top of each biscuit.
