French Three Onion Potato Soup
This brothy recipe brings the best of a traditional French Onion soup together with a potato potage or Vichyssoise-inspired soup. The key is to blend in a few boiled waxy potatoes, which serve as the thickening starch, making this a hearty gluten-free soup.
- Yield
- 4-6 servingsπ

Directions
-
In a skillet, melt the butter and sauté all the onions together until soft (about 7-8 minutes). Remove from heat.
-
In a separate stockpot, bring the vegetable broth & wine to a simmer.
-
Add chunk of Parm (or rind) and let simmer together about 5 minutes
-
On a cutting board, smash boiled potatoes flat with your hand or a spatula. Slide peels off and add potatoes to the simmering broth. Stir until smooth and incorporated (about 7-8 minutes).
-
Add herbs and spices. Taste and salt to your liking.
-
Add the onions into the broth, cover and let cook on low for about 35 minutes.
-
Serve soup hot with a sprinkle of grated Gruyere cheese, cracked black pepper and baguette crisps.
