Berries and Sabayon

This beautiful, sophisticated dessert is simple to make but, off the charts with the “wow!” factor. A luscious wine-based custard is topped with berries or your favorite fruit of choice. It’s as easy as that but, can be garnished with all sorts of fancy fruit, herbs, and crumbles.

Directions

  1. Place a large saucepan with a few inches of water over medium heat and bring to a simmer.

  2. In a large heat-proof bowl that fits conformably on top of the saucepan, add the yolks, sugar, wine, salt and vanilla, whisking constantly until it is thickened (thermometer should read 175).

  3. The custard should be thick enough to coat a spoon and create ribbons.

  4. Ladle the sauce into the bottom of a dessert bowl and top with your favorite fresh fruit of choice.
