Chana Masala

Chana Masala is a classic North Indian dish featuring tender chickpeas simmered in a fragrant, spiced tomato-based sauce. This comforting vegetarian curry showcases the depth of Indian cooking through layers of aromatic onions, garlic, ginger, and warm spices. Earthy chickpeas absorb the bold flavors of spices, creating a hearty dish that is both satisfying and versatile.

Directions

  1. Sauté the Aromatics: Heat the ghee or oil in a large skillet or saucepan over medium heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden. Add the garlic, ginger, and chili pepper, if using, and cook for another 1 to 2 minutes until fragrant.

  2. Bloom the Spices: Add the cumin, coriander, garam masala, turmeric, paprika, and chili powder. Stir constantly and cook for 30 seconds to toast the spices and release their aromas.

  3. Build the Curry Base: Add the crushed tomatoes, chickpeas, water or vegetable broth, salt, and sugar. Stir well to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook uncovered for 20 to 25 minutes, stirring occasionally, until the sauce has thickened and the flavors have developed.

  4. Finish the Chana Masala: Using the back of a spoon, gently mash a small portion of the chickpeas against the side of the pan. This helps thicken the sauce and creates a richer texture. Stir in the fresh lemon juice and chopped cilantro. Taste and adjust seasoning as needed.

  5. Serve: Transfer the Chana Masala to a serving bowl and garnish with additional fresh cilantro. Serve warm with rice and naan.
