Directions

  1. Make the Raspberry Mousse: Place the raspberries, sugar, and lemon juice in a small saucepan over medium heat. Cook, stirring, until the berries break down and the mixture becomes syrupy, about 5 minutes. Strain through a fine-mesh sieve to remove seeds and let cool completely. Stir in the vanilla.

  2. Whip Cream: In a chilled bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into cooled raspberry purée until smooth and airy. Cover and refrigerate for at least 30 minutes to set.

  3. Assemble Mousse: Transfer the raspberry mousse to a ramekin or clear glass. Chill for at least one hour and up to overnight. Cover with cling wrap if chilling longer than an hour or two.

  4. Prepare the Chocolate Dip: Heat the cream in a small pot until simmering. Do not boil. Pour over the chocolate in a heatproof bowl, stirring until smooth.

  5. Dip the Strawberries: Holding each strawberry by the stem, dip into the melted chocolate, allowing excess to drip off. Place on a parchment-lined tray and refrigerate until the chocolate is set, about 10 minutes. If using white chocolate, melt it the same way and drizzle decorative stripes over the chocolate strawberries.

  6. Serve: Serve chilled or at cool room temperature for the best flavor and texture. Place mousse glasses onto serving plates and arrange the chocolate-dipped strawberries alongside.
