Fattoush (Lebanese Pita and Tomato Salad)

Bread salads are popular throughout the Mediterranean. Fattoush is a fried bread salad that typically includes crunchy lettuce, tomatoes, cucumbers, radishes, and pan-fried pieces of pita bread. It also includes green peppers, green onions, and parsley. In Arabic, the word “fattoush” is derived from “fatteh” which literally means “crumbs” and is a good way to use up stale pita bread.

Directions

  1. Make the Dressing

  2. Whisk together the lemon juice, garlic, sumac, pomegranate molasses, mint. Slowly stream in olive oil, whisking continuously until emulsified. Season to taste with salt and pepper. Stir in the mint. Set aside.

  3. Fry the Pita Bread

  4. In a large skillet, heat olive oil on medium heat. Add the pita bread and season with kosher salt and freshly cracker peppers. Use tongs or a large spoon to flip the pieces of bread until crispy and golden in color, about 3-4 minutes. Set aside.

  5. Assemble the Salad: Place the lettuce, tomatoes, cucumbers, green peppers, radishes, green onions, and parsley in a large serving bowl. Pour the dressing on top and toss to combine.

  6. Add the fried pita bread to the salad immediately before serving and gently toss again.
