Grilled Chicken Skewers
These colorful skewers showcase marinating, knife skills, and grilling techniques. The bright flavors pair perfectly with yogurt sauce, lemon butter sauce, or roasted potatoes, creating a fresh and versatile meal using your favorite vegetables.

Directions
-
Prepare the Skewers: If using wooden skewers, soak them in water for 20–30 minutes to prevent burning during cooking.
-
Make the Marinade: In a large bowl, whisk together all marinade ingredients until well combined.
-
Marinate the Chicken: Add the chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 20 minutes.
-
Assemble the Skewers: Thread the chicken and onion pieces onto skewers, alternating ingredients for even cooking and visual appeal. Thread the vegetables onto separate skewers, as they require a different cooking time than the chicken.
-
Preheat the Grill: Preheat a grill or grill pan over medium-high heat.
-
Grill the Skewers: Place the skewers on the grill. Cook for 10–12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and the vegetables are tender with light char marks.
-
Rest and Serve: Transfer the skewers to a platter and allow them to rest for 5 minutes before serving with your selected sauce.
