Directions

  1. Dissolve the sugar and salt in 1 tablespoon of hot water. In a small bowl, add the regular soy sauce, dark soy sauce, oyster sauce, sesame oil, and white pepper. Stir in the salt-sugar water until combined.

  2. Add 2 tablespoons of vegetable oil to the wok and heat over high heat until shimmering.

  3. Add the mushrooms and the white and light green parts of the chives and stir fry for 30 seconds. The mushrooms are like sponges and will soak up the oil, so add another tablespoon of oil if they become too dry. Manage the heat and do not let the vegetables burn.

  4. Add the cooked noodles. Stir fry for another 30 seconds, using tongs to flip the noodles with the mushrooms.

  5. Pour soy sauce mixture over the noodles and use tongs to toss and stir-fry everything for 1 minute, or until the soy sauce mixture evenly coats the noodles.

  6. Pour another tablespoon of oil over the noodles and toss to prevent sticking it seems a bit dry. You can also add a splash of hot water if the noodles become dry, even after adding the sauce.

  7. Mix gently as not to break up the noodles — remember, you want long noodles for longevity and prosperity from this dish!

  8. Add in the remaining dark green parts of the chives and flip around until they turn bright green and the noodles are heated through, about 1 to 3 minutes. Serve hot.
