Directions

  1. Prepare the béchamel: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes until lightly golden. Gradually whisk in warm milk until smooth. Simmer until thickened, 3–5 minutes. Stir in Dijon mustard, nutmeg, salt, and pepper. Remove from heat.

  2. Assemble the sandwiches: Lightly butter one side of each bread slice. Place half the slices butter-side down. Spread a thin layer of béchamel over each, then top with a slice of prosciutto and a sprinkle of Gruyère. Add a second slice of bread, butter-side up.

  3. Bake: Arrange sandwiches on a parchment-lined baking sheet. Bake at 375°F for 8–10 minutes, until the bread is lightly golden.

  4. Finish with cheese: Remove from the oven, spread a small amount of béchamel on top of each sandwich, and sprinkle with remaining Gruyère. Return to the oven for 5 minutes, or until bubbly and lightly browned.

  5. Cut and serve: Let cool slightly, then trim edges and cut into small squares or rectangles for bite-sized portions. Serve warm.

  6. Chef’s Notes: Gruyère provides classic flavor, but Comté or Swiss may be substituted.

  7. Keep portions small and neat for an elegant presentation.

  8. These can be assembled ahead and baked just before serving for ease.
