Mojito Grilled Chicken

Bright, refreshing, and made for the grill, this Mojito Grilled Chicken is inspired by the classic cocktail’s flavors of citrus, mint, and a hint of rum. A zingy marinade keeps the chicken juicy and flavorful while adding a fresh summer twist perfect for patio dining.

Directions

  1. Build the Marinade: In a small saucepan, heat the olive oil over medium heat until shimmering. Add the onion and cook for 3–4 minutes, stirring occasionally, until softened and translucent. Stir in the garlic and cook for 30 seconds, just until fragrant.

  2. Simmer Marinade: Reduce the heat to low and carefully pour in the orange juice, lime juice, and rum. Be careful with splattering. Stir in the salt, pepper, cumin, and oregano. Simmer gently for 5 minutes to meld the flavors and slightly reduce the marinade. Remove from heat and stir in the cilantro.

  3. Marinate the Chicken: Allow the marinade to cool. Place the chicken in a shallow dish or resealable bag and pour the marinade over top, turning to coat evenly. Refrigerate for at least 30 minutes or up to 4 hours.

  4. Grill the Chicken: Preheat a grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade, letting excess drip off. Reserve the marinade.

  5. Grill the chicken for 4–5 minutes on the first side until nicely marked and lightly charred. Flip and baste lightly with the reserved marinade. Continue grilling for another 4–6 minutes, or until the thickest part reaches 165°F.

  6. Serve: Transfer to a platter and let rest for 5 minutes before serving. Garnish with additional cilantro and fresh lime wedges.
