Pomodoro Tomato Sauce

Pomodoro is a tomato-based pasta sauce made from a combination of fresh tomatoes, garlic, olive oil, and fresh basil. Pomodoro means “golden apple,” because the sauce was traditionally made with tomatoes that were slightly yellow in color, resembling the local apples. Pairs well with the sausage and three cheese fillings.

Directions

  1. In a sauté pan, heat up the olive oil until it shimmers.

  2. Add onion and cook until tender, 4 to 5 minutes. Add in garlic for the last minute.

  3. Stir in tomatoes, then add tomato paste, sugar and oregano.

  4. Season with salt and pepper to taste.

  5. Simmer over low heat, stirring occasionally.

  6. Cook for 25 minutes, letting the sauce reduce and thicken up a bit.

  7. Garnish pasta with basil ribbons and fresh parsley.

  8. To chiffonade basil: Make a stack of leaves. Roll them into a cigar shape along the long edges. Slice finely and unravel to reveal ribbons of basil.
