White Wine Garlic Vegetables

Using white wine to roast vegetables gives them a boost of flavor and mild sweetness. The key is to cut all the vegetables to the same size for even cooking. Combine your favorite seasonal vegetables with dry white wine, garlic, and herbs for a delicious side dish perfect for a special occasion or any meal.

Directions

  1. Preheat the oven to 400°F.

  2. Line a baking sheet with parchment or foil.

  3. To a large bowl, add all the vegetables, except the garlic. Use a large spoon to stir in the olive oil and wine, tossing until thoroughly coasted. Season with salt and pepper.

  4. Spread the vegetables evenly on the lined baking sheet and place the fresh herbs across the top. Roast for 40 minutes, tossing the vegetables every 15 minutes.

  5. During the last 10 minutes, add the garlic and roast until the vegetables are fork tender and the wine has evaporated.

  6. Remove from the oven, adjust seasonings, and serve hot.
