Zucchini & Sweet Corn Fritters with Herbed Yogurt Sauce
Crispy on the outside and tender inside, these golden fritters showcase the natural sweetness of fresh corn and the mild earthiness of zucchini. Light yet satisfying, they’re shallow, pan-fried to perfection and paired with a cool, tangy yogurt sauce infused with fresh herbs for a refreshing, flavorful contrast.
- Yield
- 10-12 small fritters

Directions
-
Prepare the Zucchini: Place grated zucchini in a colander and sprinkle with 1 teaspoon salt. Let sit for 10 minutes to draw out moisture. Using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible.
-
Make the Fritter Batter: In a large bowl, combine the drained zucchini, corn, scallions, garlic, and herbs.
-
Stir in the eggs, then add the flour, baking powder, and pepper. Mix until just combined. The batter should hold together—if it’s too wet, add a little more flour.
-
Shallow Fry the Fritters: Heat a few tablespoons of oil in a large skillet over medium heat.
-
Drop 2-tablespoon portions of batter into the pan and flatten slightly. Cook 2–3 minutes per side, or until golden brown and crisp.
-
Transfer to a paper towel-lined plate and keep warm.
-
Make the Yogurt Sauce: In a small bowl, mix yogurt, lemon juice, zest, herbs, salt, and pepper.
-
Serve: Serve fritters warm with a generous dollop of herbed yogurt sauce on the side or on top.
