Directions

  1. Prepare fruit: Cut half of the fruit into thick slices to grill and chop the other half of the fruit into small pieces.

  2. Macerate diced fruit: Place the small-diced fruit into a bowl and toss with 1 tablespoon of sugar and pinch of salt.

  3. Grill sliced fruit: Preheat a grill or grill pan to medium-high heat. In a bowl, toss the fruit with brown sugar, honey, melted butter, and vanilla. Grill the fruit for 2–3 minutes per side until lightly charred and caramelized. Remove and let cool slightly. Cut the grilled fruit into bite-sized pieces.

  4. Assemble: To assemble the parfaits, layer shortcake cubes, drizzle with macerated fruit and syrup, grilled fruit, and whipped cream into glasses or jars. Repeat the layers until filled.

  5. Serve: Garnish with fresh mint and any optional toppings. Serve immediately or chill briefly before serving.
