Directions

  1. Prepare the Cucumber: Place the diced cucumber in a fine-mesh strainer and sprinkle with ½ teaspoon salt. Let sit for 10 to 15 minutes to draw out excess moisture. Gently press the cucumber with a spoon or squeeze lightly with a clean kitchen towel to remove excess liquid. This helps keep the raita thick and creamy.

  2. Prepare the Yogurt Base: In a medium bowl, whisk the yogurt until smooth and creamy. Add the cumin, coriander, cayenne pepper, lemon juice, garlic, cilantro, and mint. Stir until well combined.

  3. Combine the Raita: Fold the cucumber into the seasoned yogurt mixture. Taste and adjust seasoning with additional salt or lemon juice as needed.

  4. Chill and Serve: Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend. Garnish with additional fresh herbs and a sprinkle of ground cumin, if desired. Serve chilled.
