Pomodoro Sauce
This is a simple vegetarian skillet sauce with a nice depth of flavor and loaded with tomatoes and garlic. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are cooked through as the sauce becomes thicker and smoother than your classic marinara.

Directions
-
In a sauté pan, heat up the olive oil until it shimmers. 2. Add onion and cook until tender, 4 or 5 minutes. 3. Add garlic for the last minute. 4. Stir in tomatoes; then add tomato paste, sugar, pepper flakes, and oregano. 5. Simmer over low heat, stirring occasionally. 6. Cook for 25 minutes, letting it reduce and thicken up a bit. Adjust salt and pepper to taste. 7. Garnish pasta with basil leaves.
