Buddha’s Delight

Lo Han Jai, nicknamed Buddha’s Delight, is a traditional Chinese stir-fry served on the first day of the Lunar New Year and it symbolizes purification and enlightenment. It is vegetarian and full of textures and color (typically using 18 ingredients to represent the 18 disciples of Buddha). It always includes a variety of mushrooms and tofu, and a colorful array of vegetables like carrots, snow peas, corn, cabbage, and bok choy. And the best part is that you can make it in under 30 minutes.

Directions

  1. For the sauce: In a small bowl, whisk together the soy sauce, sesame oil, honey, ginger and garlic. Mix the cornstarch with 1/4 cup of cold water and add to the soy sauce mixture; stir to combine.

  2. For the stir-fry: Heat oil in wok or large pan over medium-high heat. Add the broccoli, red bell pepper, carrots, and baby corn and season with salt and pepper. Cook for 2 to 3 minutes, constantly stirring.

  3. Add 1/4 cup of broth to the pan and simmer for 3 to 4 minutes more or until vegetables are tender; stirring occasionally.

  4. Stir in the bok choy, peas, mushrooms and water chestnuts, tossing with the vegetables for another 2 minutes.

  5. Gently toss in the tofu, being sure not to break it up too much.

  6. Pour the sauce over the stir-fry and bring to a boil for one minute or until sauce has just thickened.

  7. Serve with rice and garnish with reserved green onion and sesame seeds.

  8. Chinese Almond Cookies

  9. Chinese almond cookies are buttery, sweet cookies like sugar cookies but made with almond flour for a chewy, nutty flavor. Their round, coin-like shape represents good fortune and prosperity in the new year.
